Fresh Veggie “Meal in a Dish”

Summer is here, and if you planted a garden—or even if you didn’t—farm or garden fresh fruits and veggies will be ready for their harvest come August. It’s my favorite time of year.

One of my favorite recipes is something called “Meal in a Dish.”  It’s something my mom has been making for years; and now, I make it for my family. 

Meal in a Dish

INGREDIENTS:

  • 2 lbs ground beef, browned and drained
  • 8 ears of corn on the cob cooked and cut off the cob 
  • 2-3 large beefsteak tomatoes sliced.
  • Salt
  • Pepper
  • Corn flakes

DIRECTIONS:

Layer beef, corn and tomatoes in a Dutch oven or deep dish casserole. Salt and pepper after each layer of tomatoes.  Keep layering until your dish is full. Top with corn flakes and bake at 375 for 35-40 minutes. Enjoy!
