Banana Pancakes

I love breakfast. Who doesn’t?! Unfortunately, most of us don’t always make the healthiest choices when it comes to breakfast foods. Breakfast is the most important meal of the day. It’s the start of everything. Each day is a new journey, and you should fuel your body with healthy stuff, right from the start! This breakfast is easy to make, filling, nutritious, and best of all, absolutely delicious!! It’s one of my favorite recipes, my husband and children love it too, and we eat it for breakfast at least once a week!

Banana Pancakes

Ingredients:
2 eggs
1 ripe banana
1 tsp cinnamon
1/2 cup 1% cottage cheese
few berries or fruit of your choice

1) Blend eggs, banana, and cinnamon well (I use my NutriBullet for this)
2) Cook as you would regular pancakes in a pan coated with coconut oil
3) Garnish with the cottage cheese, fruit and a drizzle of honey
