3-5 Ingredient Healthy Treats

During COVID-19 social distancing, we’ve been shopping less, of course, which mandates greater creativity in the kitchen.

My daughter has nailed the kitchen creativity, cooking meals and experimenting to develop her own snack recipes.

Among my daughter’s successful food prep forays has been a not-so-exact, every-time-a-bit-different, but always-devoured-within-a-day recipe that we have to keep away from her little brother so as not to have it vanish within minutes!

According to her, the general recipe goes like this:

INGREDIENTS:

  • 10 Medjool dates, pitted
  • ¼ cup peanut butter
  • 1-2 tablespoons cocoa powder
  • Honey (if not sweet enough for your liking)
  • Vanilla (optional)

DIRECTIONS:

Process dates in food processor until they are in small chunks. Add peanut butter and process for a minute at most. Add cocoa powder and vanilla, if using it, and process again.

Taste it and add a tad bit more peanut butter or some sweetener as desired. (It is a forgiving recipe.) Process until it forms a ball or sticky mass that can be easily squeezed together.

Gather it into a ball, place the ball off center on parchment paper, fold the parchment paper in half, and roll out to desired thickness.  Alternately, make them into Tootsie Roll like shapes.

Wrap in parchment paper or put it in a covered container and chill in the freezer for five minutes.

Enjoy eating it, or keep it in the freezer until later – making sure not to tell little brothers or Daddy’s that it is there if you wish to have any left for yourself!
